Back To School – Lunch Dilemma
Ahhh, summer’s over. Back to routine. You may have noticed we took a break from blogging. We were busy packing almost 1500 kits this August. We are pleased to have been able to help so many parents squeeze a little bit more out of their summer. We have lots of exciting news to share with all of you in the coming months. But for now, what are you making for lunches? Leave your ideas below in the comment section and maybe we can help ease each other’s burden this year.

I’m always open for ideas on kids’ lunches!
So far I’ve done pizza (always a pleaser) or a jam sandwich and fresh fruit cup, with a nut/peanut-free granola bar for a snack. And a water bottle of course! Our school requests trash free lunches, so no plastic baggies or tetra paks for us.
I do at least two thermos meals a week with leftovers from the night before. I pour boiling water in thermos for at least 15 min. in the morning and then empty just before I put in hot food.
My son hates lunch meat, so ofte I make a double breakfast (pancakes, bacon, eggos, toaster sticks, grilled cheese) & wrap the extra in foil & send it along. He’s happier that way
My son isn’t in school, but I have to deal with lunches each day too and these can be used for school lunches:
We have a few standbys:
-Baked beans (with veggies or cheese)
-Pita and hummus or babaganoush (I just butched that spelling, but you know)
-Sandwiches: favs are egg salad or salmon. As an alternative, if kids don’t eat sandwiches, buy those little mini pitas, cut in half and stuff with filling.
Good luck, lunches are the hardest thing for me!
